Honey, similar in composition to invert syrup therefore is a mixture of reducing sugars. Honey is expensive and is used principally for its flavour. The flavour depends upon which flowers the bees have visited while collecting the nectar which produces the honey.

It is possible to make a honey like syrup from invert syrup and flavouring but it is an offence to call this "honey" in either the product name or in the ingredient list.
